Gluten Free Pretzel Crusted Chicken Nuggets

Gluten-free pretzel crusted chicken nuggets are a must-have for parties, school lunches or a weeknight meal. Did I mention these babies are also grain-free and soooo good!

When I was kid my mom would always make chicken fingers crusted in whatever she had on hand. Pretzels were one of my favorites. I just love that salty crunch with the chicken. So good.

Gluten-Free Pretzel Crusted Chicken Nuggets

As you can see from the video, these gluten-free pretzel crusted chicken nuggets are so easy to make and you don't even need to feel guilty when you eat the whole tray (I'm not saying that happened at my house, but I'm not saying it didn't happen either!). 

These babies are just irresistible. Serve them with ketchup or for an adult spin, you have got to try my Greek Yogurt herb dipping sauce. You will be using these gluten-free pretzel crusted chicken nuggets to swipe up every last bit of it!

 Let's Talk Recipe Notes 

These are really easy and quick to make. Just a few notes to keep you on track.

  * Salt and pepper your chicken. Chicken needs salt and pepper, don't leave it out.

  * Whisk your eggs really good to get the yolk and white combined. If you can't have eggs, you can use olive oil.

  * Grind up your pretzels well. A food processor works best for this. You want a good mix of fine pretzels and pieces to get really good coverage.

   * Use a cooling rack to bake them on, this way they are crispy on all sides.

Ingredients

Pretzel Crusted Chicken Nuggets:

  •  1 pound chicken breast, cut into 1 inch cubes 
  •  salt and pepper 
  •  1 bag FitJoy Grain Free Pretzels, ground in a food processor 
  •  2 eggs, beaten 

Greek Yogurt Herb Dipping Sauce: 

  • 1 cup plain greek yogurt 
  • 1 teaspoon onion salt 
  • 1/2 teaspoon garlic powder 
  • 2 teaspoons chopped chives 
  • 2 teaspoons minced dill 

Instructions

  1. Preheat oven to 400 degrees. 
  2. Line pan with parchment paper or foil and a cooling rack. 
  3. Salt and pepper chicken pieces. 
  4. Dip chicken into the egg and then press into pretzel pieces. 
  5. Arrange on a cooling rack. 
  6. Bake for 20 minutes or until chicken is 165 degrees. 

Greek Yogurt Herb Dipping Sauce:

  1. Mix together all ingredients. 
  2. Refrigerate until ready to serve.
